The 3 Weapons
Foil
The foil has a small, round hand-guard and a blade that is rectangular in cross-section. Foil is a thrusting weapon, so that legitimate hits can only be obtained by scoring a touch with the point of the weapon. The only legitimate target is the torso. Foil fencing is controlled by "Right of Way",
Épeé (Weapon that VJC uses)
The Épeé has a large hand-guard and a blade which has a V-shaped cross-section. Fencers are allowed to hit any part of the opponent's body. The nature of the Epee as a heavy thrusting weapon with a stiff blade makes the requirements for Epee more difficult and usually a lot more tactical as both fencers have to put extra concentration in hitting their opponents but at the same time defend themselves from being hit anywhere. There is no "priority rule" unlike foil and sabre so if both fencers get hit they both get a point regardless of blade action etc which the priority rule involves.
Sabre
The Sabre has a basket-shaped hand-guard that completely covers the hand, and a blade which is Y-shaped in cross-section. The Sabre is a weapon of cut and thrust. Sabre fencers can score with the tip, but more commonly use the edge of the weapon to make "cuts" to the target. Sabre also like in Foil is subject to a "priority rule.

Touch — A hit on the valid or non-valid target with the tip of a weapon, or the edge of a Sabre. A touch stops the fencing action.
